About Grillo
This Grillo features intense straw-yellow color and a fragrant bouquet with hints of tropical fruits such as papaya, mango and jasmine and wildflowers.
Grillo
Grillo is perhaps the most famous indigenous white varietal of Sicily. The unique soils and the warm climate in our vineyards in Acate, in the province of Ragusa, deliver especially rich Grillo grapes with character and an elegant aroma. “Espalier” trellising system is used with an average density of about 4,500 plants per hectare.
After harvest and soft pressing, vinification takes place with semi-reduction technique. The wine undergoes natural settling and fermentation takes place at a controlled temperature of 16°C for 13 days in stainless steel tanks.
This Grillo features intense straw-yellow color and a fragrant bouquet with hints of tropical fruits such as papaya, mango and jasmine and wildflowers. The taste is balanced, quite aromatic, fresh and with a crisp minerality.
Versatile at the table, it pairs extremely well with fresh and baked seafood including sushi, vegetable-based main courses, white meats, fresh cheeses and goat cheeses.
